I adore pizza. In fact, when making large purchases, I like to quantify how many pizza’s I am sacrificing. New iPhone? That’s 12 large meat encrusted pizzas with a garbage bag of breadsticks.
I wanted that same flavor throughout the week without the weight gain, and the preparation needed to be simple. I’m a simple man at heart, with simple needs. Enter this pizza inspired dish that’s keeping me happy throughout the week.
Hands on Time : 5-10 Minutes
Cook Time : 4-6 Hours on Low
Equipment : Slow Cooker
Ingredients :
- 4 lbs Chicken Breast. Boneless, Skinless.
- 2 cups Marinara Sauce. Roughly one 16oz jar.
- 6 oz Pepperoni. Thin sliced.
- 1/4 cup Sriracha or your favorite hot sauce.
Directions :

Create a layer of chicken topped with drizzles of sriracha, onions, and marinara sauce on the bottom of the slow cooker. Top with a layer of pepperoni ensuring you are covering as much of the chicken possible. Continue to create layers of chicken, sauce, onion, and pepperoni until finished.

Cook 4-6 hours on low.

Once finished, remove chicken and pepperoni to a dish, using a large spoon to skim excess fat off surface of sauce. Gently shred chicken with two forks, not too finely. Add 2 or more cups of the braising liquid(leftover liquid) to keep the chicken soft and tender. When serving top with fresh mozzarella cheese.
