I love turkey. It’s easy on the wallet and the perfect option for making A LOT of lean meat that tastes awesome. The big challenge with turkey is it tends to have a flat flavor and can easily dry out, but it really shines in the slow cooker.
This recipe remains a staple in my weekly rotation throughout spring/summer with it’s fresh citrus flavor and chipotle kick. Mix in a salad, create tacos, or eat by itself.
Hands On Time : 10-15 Minutes
Cook Time : 4-6 Hours
Equipment : Slow Cooker
Ingredients
- 3 lbs Ground Turkey
- 2 Onions, Diced
- 1/4 cup Chili Powder
- 8oz Can Tomato Sauce
- 1 tbls Fresh Oregano, or 1 Tsp Dried
- 2 tbls Oil – i.e. Olive or Macadamia Nut Oil
- 6 Clove Garlic, Minced
- 2 tbls Minced Chipotles in Adobo Sauce (You can sub with a diced Jalapeno)
- 2 tsp Brown Sugar
Once Finished Cooking, Mix In:
- 2 tbls Lime Juice (2 Small Limes)
- 1/4 cup Chopped Fresh Cilantro, or 1 tbls Dried
- Salt and Pepper
- Optional: 3 Chopped Scallions
Directions
Microwave your onions, spices, oil, chipotles/jalapeno/red peppers, and brown sugar for 5 minutes. Once finished, carefully mix with the raw turkey and tomato sauce in your slow cooker and let cook for 4 to 6 hours on low. Feel free to break up the meat halfway through cooking.
Once finished, move the turkey mix to a bowl. Add the lime juice, chopped cilantro, and scallions if you have them available.
5 Minute Prep Variation
Throw turkey, spices, tomato sauce, and whatever you have time to chop in the slow cooker and cook for 4-6 hours. You can also use frozen diced onions and garlic to shave off time. Out of fresh cilantro? Use 2 tsp dried.
